To make this dish at home by prescription from the author Gomer would need: 1L water, 1 Massel vegetable stock cube, 260g instant polenta, 10g butter, 1 tbsp fresh thyme leaves , 1 tbsp finely grated lemon rind, 1 tbsp fresh lemon juice, Salt & freshly ground black pepper , Vegetable ratatouille, to serve.

Ingredients:

  • 1L water 
  • 1 Massel vegetable stock cube 
  • 260g instant polenta 
  • 10g butter 
  • 1 tbsp fresh thyme leaves 
  • 1 tbsp finely grated lemon rind 
  • 1 tbsp fresh lemon juice 
  • Salt & freshly ground black pepper 
  • Vegetable ratatouille, to serve 

Instructions

  1. Combine the water and stock cube in a large saucepan and bring to the boil over high heat. Gradually add the polenta in a thin steady stream, stirring constantly with a wooden spoon for 3-5 minutes or until polenta thickens. Remove from heat.
  2. Quickly stir in the butter, thyme, lemon rind and lemon juice. Taste and season with salt and pepper. Divide the polenta among serving plates. Top with the vegetable ratatouille and serve immediately.
