Orange crepes

Ingredients:
- 2 oranges
- 50g unsalted butter
- 1/3 cup caster sugar
- 400g packet frozen French-style crepes, thawed
- 3/4 cup orange juice
Instructions
- Finely grate rind of 1 orange. Peel and segment oranges (see note). Heat a large, non-stick frying pan over medium heat. Add butter and sugar. Cook, stirring, for 2 to 3 minutes or until bubbling. Add grated rind and juice. Simmer for 1 minute. Stir in orange segments.
- Fold crepes into quarters. Add to orange mixture. Spoon sauce over crepes. Simmer for 1 to 2 minutes or until heated through. Arrange crepes on plates. Drizzle with sauce. Serve.
