To make this dish at home by prescription from the author Gomer would need: 8 flat mushrooms, 2 tbsp olive oil, Salt & freshly ground black pepper, 1 x 250g pkt frozen chopped-leaf spinach, thawed, 200g fresh ricotta , 1 tbsp chopped fresh oregano, 1 garlic clove, crushed, 200g bought chargrilled red capsicum, drained well on paper towel, sliced , 80g coarsely grated mozzarella.
Ingredients:
- 8 flat mushrooms
- 2 tbsp olive oil
- Salt & freshly ground black pepper
- 1 x 250g pkt frozen chopped-leaf spinach, thawed
- 200g fresh ricotta
- 1 tbsp chopped fresh oregano
- 1 garlic clove, crushed
- 200g bought chargrilled red capsicum, drained well on paper towel, sliced
- 80g coarsely grated mozzarella
Instructions
- Preheat oven to 200°C. Trim the mushroom stems and place mushrooms, stem-side up, in a roasting pan. Drizzle with oil and season with salt and pepper.
- Combine spinach, ricotta, oregano and garlic in a bowl. Top each mushroom with some capsicum and some of the spinach and ricotta mixture. Sprinkle evenly with mozzarella and cook in preheated oven for 15 minutes or until cheese melts and mushrooms are tender.
- Serve immediately with grilled chicken or lamb, if desired.
