Mini lime and lemongrass rice paper rolls

These zesty rice paper rolls are the perfect between-meals snack.

To make this dish at home by prescription from the author Gomer would need: 1 medium carrot, peeled, grated, 1 small red capsicum, thinly sliced, 1 tbsp finely chopped lemongrass, 3 green onions, thinly sliced, 1 tbsp lime juice , 1 tbsp sweet chilli sauce, 16 small rice paper rounds, 16 fresh mint leaves , 1/2 cup fresh coriander leaves, Sweet chilli sauce, to serve.

Ingredients:

  • 1 medium carrot, peeled, grated 
  • 1 small red capsicum, thinly sliced 
  • 1 tbsp finely chopped lemongrass 
  • 3 green onions, thinly sliced 
  • 1 tbsp lime juice 
  • 1 tbsp sweet chilli sauce 
  • 16 small rice paper rounds 
  • 16 fresh mint leaves 
  • 1/2 cup fresh coriander leaves 
  • Sweet chilli sauce, to serve 

Instructions

  1. Place carrot, capsicum, lemongrass, onion, lime juice and sweet chilli sauce in a bowl. Toss to combine.
  2. Half-fill a shallow dish with warm water. Dip 1 rice paper round in water. Place on a flat surface. Stand for 20 to 30 seconds or until soft enough to roll without splitting. Arrange 1 mint leaf in centre of round. Place 1 coriander leaf at each end of mint leaf. Top with 1 tablespoon carrot mixture. Fold in ends. Roll up firmly to enclose filling. Place on a plate. Cover with a damp tea towel to prevent roll drying out. Repeat with remaining rice paper rounds, mint, coriander and carrot mixture to make 16 rolls. Serve with sweet chilli sauce.
