Cheesy pizza dip

Filled with classic pizza flavours such as tomato and mozzarella, this dip is a great way to indulge yourself.

To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 1 medium brown onion, finely chopped, 1 garlic clove, crushed, 400g can diced tomatoes, 2 tbsp sweet chilli sauce , 125g spreadable cream cheese, softened, 1/3 cup grated tasty cheese, 1/3 cup grated mozzarella , 3/4 cup frozen corn kernels, thawed.

Ingredients:

  • 1 tbsp olive oil 
  • 1 medium brown onion, finely chopped 
  • 1 garlic clove, crushed 
  • 400g can diced tomatoes 
  • 2 tbsp sweet chilli sauce 
  • 125g spreadable cream cheese, softened 
  • 1/3 cup grated tasty cheese 
  • 1/3 cup grated mozzarella 
  • 3/4 cup frozen corn kernels, thawed 

Instructions

  1. Preheat oven to 220°C/200°C fan-forced. Heat oil in a medium saucepan over medium-high heat. Add onion. Cook, stirring, for 5 minutes or until softened. Add garlic. Cook, stirring, for 30 seconds or until fragrant. Add tomato and sweet chilli sauce. Bring to the boil. Reduce heat to low. Simmer, uncovered, for 5 minutes or until thickened.
  2. Spoon tomato mixture into the base of a 2 cup-capacity ovenproof dish.
  3. Combine cream cheese, tasty cheese and mozzarella in a small bowl. Top tomato mixture with corn kernels. Dollop with cream cheese mixture (see note). Bake for 20 minutes or until cheese has melted. Stand for 10 minutes. Serve.
