Beans with tahini dressing & walnuts

Dress up crunchy green beans with a thick sesame, mint and yoghurt sauce.

To make this dish at home by prescription from the author Gomer would need: 2 tbsp tahini, 2 tbsp Greek-style natural yoghurt, 2 tbsp fresh lemon juice, 2 tbsp water, 1/2 garlic clove, crushed , 2 tbsp chopped fresh mint, 400g green round beans, trimmed, 2 tbsp chopped walnuts , Ground sumac, to serve.
Ingredients:
- 2 tbsp tahini
- 2 tbsp Greek-style natural yoghurt
- 2 tbsp fresh lemon juice
- 2 tbsp water
- 1/2 garlic clove, crushed
- 2 tbsp chopped fresh mint
- 400g green round beans, trimmed
- 2 tbsp chopped walnuts
- Ground sumac, to serve
Instructions
- Combine the tahini, yoghurt, lemon juice, water and garlic in a small bowl until well combined. Stir in the mint. Season with salt and pepper.
- Cook the beans in a large saucepan of salted boiling water for 2 minutes or until bright green and tender crisp. Drain and refresh under cold running water.
- Place the beans on a serving platter. Spoon over the tahini dressing. Top with the walnuts and sprinkle with sumac.
