To make this dish at home by prescription from the author Gomer would need: 2 tbsp balsamic vinegar, 1/4 cup extra-virgin olive oil, 1 cup plain flour, 1/2 tsp freshly grated nutmeg, 1 tsp smoked paprika , 1 cup sparkling mineral water, 1 egg, lightly beaten, 3 corn cobs, kernels removed , 4 green onions, finely chopped, 2 tbsp dill leaves, finely chopped, 2 tbsp mint leaves, chopped, 1 small red capsicum, finely diced, 1 long red chilli, deseeded, finely chopped, 20g butter, vegetable oil, for shallow frying, rocket leaves and toasted sourdough bread, to serve.

Ingredients:

  • 2 tbsp balsamic vinegar 
  • 1/4 cup extra-virgin olive oil 
  • 1 cup plain flour 
  • 1/2 tsp freshly grated nutmeg 
  • 1 tsp smoked paprika 
  • 1 cup sparkling mineral water 
  • 1 egg, lightly beaten 
  • 3 corn cobs, kernels removed 
  • 4 green onions, finely chopped 
  • 2 tbsp dill leaves, finely chopped 
  • 2 tbsp mint leaves, chopped 
  • 1 small red capsicum, finely diced 
  • 1 long red chilli, deseeded, finely chopped 
  • 20g butter 
  • vegetable oil, for shallow frying 
  • rocket leaves and toasted sourdough bread, to serve 

Instructions

  1. Preheat oven to 150°C. Place a wire rack over a baking tray lined with paper towel. Combine vinegar and extra-virgin olive oil in a small jug. Season with salt and pepper. Set aside.
  2. Sift flour, nutmeg and paprika into a bowl. Season with salt and pepper. Make a well in the centre. Add mineral water and egg. Whisk until a smooth batter forms. Add corn, onions, dill, mint, capsicum and chilli. Stir gently to combine.
  3. Add butter and enough vegetable oil to a large non-stick frying pan to cover base. Heat over medium heat. Using 1/4 cup mixture per fritter, spoon mixture, 3 fritters at a time, into hot oil mixture. Cook for 4 to 5 minutes each side or until golden and cooked through. Transfer to wire rack. Keep warm in oven while cooking remaining fritters. Place fritters on plates. Top with rocket. Drizzle with balsamic dressing and serve with bread.
