Crunchy muesli provides a bright start to the day!

To make this dish at home by prescription from the author Gomer would need: 16 dried figs, chopped, 1 cup each sultanas, dried cranberries* and dried cherries*, 150g dried apricots, chopped, 1kg rolled oats, 200g slivered almonds , 250g sunflower seed kernels, 250g pepitas, 1 tbsp ground cinnamon , Finely grated rind of 2 oranges, 1 cup firmly packed brown sugar, 100ml canola oil, 2 tsp vanilla extract.

Ingredients:

  • 16 dried figs, chopped 
  • 1 cup each sultanas, dried cranberries* and dried cherries* 
  • 150g dried apricots, chopped 
  • 1kg rolled oats 
  • 200g slivered almonds 
  • 250g sunflower seed kernels 
  • 250g pepitas 
  • 1 tbsp ground cinnamon 
  • Finely grated rind of 2 oranges 
  • 1 cup firmly packed brown sugar 
  • 100ml canola oil 
  • 2 tsp vanilla extract 

Instructions

  1. Preheat oven to 160°C. Combine dried fruit in an airtight container and seal. Combine oats, almonds, seeds, cinnamon, rind, sugar and 1/2 teaspoon salt in a bowl. Whisk together oil, vanilla and 200ml water and drizzle over oat mixture then, using your hands, mix until well combined.
  2. Spread mixture over 2 large, oiled oven trays. Bake for 1 hour, stirring occasionally and swapping trays halfway through, or until golden. Cool on trays then transfer to airtight containers. To serve, add 1/4 cup fruit mixture to each cup of muesli.
