To make this dish at home by prescription from the author Gomer would need: 40ml vegetable oil, plus extra to fry, 1 small onion, finely chopped, 2 garlic cloves, chopped, 1 small red chilli, seeded, finely chopped, 350g potatoes, peeled, diced, boiled , 50g frozen peas, thawed, 2 tsp mild curry powder, 2 tbsp chopped fresh coriander , 8 large slices white bread, crusts removed, Mango chutney, raita* and salad, optional, to serve.

Ingredients:

  • 40ml vegetable oil, plus extra to fry 
  • 1 small onion, finely chopped 
  • 2 garlic cloves, chopped 
  • 1 small red chilli, seeded, finely chopped 
  • 350g potatoes, peeled, diced, boiled 
  • 50g frozen peas, thawed 
  • 2 tsp mild curry powder 
  • 2 tbsp chopped fresh coriander 
  • 8 large slices white bread, crusts removed 
  • Mango chutney, raita* and salad, optional, to serve 

Instructions

  1. Heat the vegetable oil in a large frying pan over medium heat. Add the onion, garlic and chilli and cook for 2 minutes. Add the potato, peas and curry powder and cook for a further 1-2 minutes, mashing together to combine. Remove from the heat, season with salt and pepper and stir in the coriander.
  2. Use a rolling pin to flatten each slice of bread. Divide the filling evenly and place in the centre of each piece of bread. Brush the edges with a little water then fold over corner to corner, pressing the edges to form a seal.
  3. Heat the oil in a deep frying pan over high heat. Add the samosas and fry until golden on both sides. Serve with mango chutney, raita and a salad.
