To make this dish at home by prescription from the author Gomer would need: 1 1/2 tbsp extra virgin olive oil, 2 garlic cloves, thinly sliced, 1 tbsp fresh oregano leaves, 400g can butter beans, drained, rinsed, 1 bunch radicchio, leaves separated , 1 tbsp red wine vinegar, 2 tbsp chopped fresh chives .

Ingredients:

  • 1 1/2 tbsp extra virgin olive oil 
  • 2 garlic cloves, thinly sliced 
  • 1 tbsp fresh oregano leaves 
  • 400g can butter beans, drained, rinsed 
  • 1 bunch radicchio, leaves separated 
  • 1 tbsp red wine vinegar 
  • 2 tbsp chopped fresh chives 

Instructions

  1. Heat 1 tablespoon oil in a large frying pan over medium heat. Add garlic and oregano. Cook, stirring, for 1 minute or until fragrant.
  2. Add beans and radicchio. Cook, tossing gently, for 1 to 2 minutes or until beans are heated through and radicchio starts to wilt.
  3. Drizzle with vinegar and remaining oil. Toss for 1 minute. Remove from heat. Serve sprinkled with chives.
