To make this dish at home by prescription from the author Gomer would need: 1 large eggplant, cut into 1.5cm-thick slices, 100ml olive oil, 2 cloves garlic, finely chopped, 1 tsp ground cumin, 1 tsp sweet paprika , 1/4 tsp harissa, 2 roma tomatoes, peeled, seeded, finely chopped, Juice of 1/2 lemon .

Ingredients:

  • 1 large eggplant, cut into 1.5cm-thick slices 
  • 100ml olive oil 
  • 2 cloves garlic, finely chopped 
  • 1 tsp ground cumin 
  • 1 tsp sweet paprika 
  • 1/4 tsp harissa 
  • 2 roma tomatoes, peeled, seeded, finely chopped 
  • Juice of 1/2 lemon 

Instructions

  1. Preheat grill to medium. Brush eggplant with 2 tablespoons oil and grill for 16 minutes, turning halfway, until soft and golden. Cool slightly, then chop roughly.
  2. Stir remaining oil, garlic, spices and harissa in a frying pan over medium heat for 2 minutes or until fragrant. Add eggplant and tomatoes, and cook for 10 minutes or until thick and well combined. Stir in lemon juice. Season.
