This gluten-free salad packs a punch of flavour with the addition of capers and red onion.

Ingredients:

  • 1/4 cup lemon juice 
  • 2 tbsp olive oil 
  • Pinch of caster sugar 
  • 1/2 small iceberg lettuce, leaves torn 
  • 1/2 small red onion, halved, thinly sliced 
  • 2 tbsp drained capers, rinsed 
  • 1 avocado, chopped 

Instructions

  1. Place lemon juice, oil and sugar in a small bowl. Season with salt and pepper. Stir until sugar has dissolved.
  2. Combine lettuce, onion and capers in a large bowl. Top with avocado and drizzle with dressing. Serve.
