This gluten-free salad packs a punch of flavour with the addition of capers and red onion.

Ingredients:
- 1/4 cup lemon juice
- 2 tbsp olive oil
- Pinch of caster sugar
- 1/2 small iceberg lettuce, leaves torn
- 1/2 small red onion, halved, thinly sliced
- 2 tbsp drained capers, rinsed
- 1 avocado, chopped
Instructions
- Place lemon juice, oil and sugar in a small bowl. Season with salt and pepper. Stir until sugar has dissolved.
- Combine lettuce, onion and capers in a large bowl. Top with avocado and drizzle with dressing. Serve.
