To make this dish at home by prescription from the author Gomer would need: 3 small zucchini, trimmed, peeled into ribbons, 225g jar chargrilled artichokes, drained, quartered, 50g mixed salad leaves, 2 tbsp capers, rinsed, drained, 1 1/2 tbsp pine nuts, toasted , 1 1/2 tbsp fresh lemon juice, 1 tbsp olive oil .
Ingredients:
- 3 small zucchini, trimmed, peeled into ribbons
- 225g jar chargrilled artichokes, drained, quartered
- 50g mixed salad leaves
- 2 tbsp capers, rinsed, drained
- 1 1/2 tbsp pine nuts, toasted
- 1 1/2 tbsp fresh lemon juice
- 1 tbsp olive oil
Instructions
- Combine the zucchini, artichoke, mixed salad leaves, capers and pine nuts on a serving platter.
- Combine the lemon juice and oil in a jug. Drizzle over the salad.
