To make this dish at home by prescription from the author Gomer would need: 1 Spanish onion, halved, very thinly sliced, 60ml cider vinegar, 600g each chat and kipfler potatoes, 2 tsp brown mustard seeds, toasted, 1 tsp cumin seeds, toasted , 1 tsp caraway seeds, 1/2 tsp celery seeds, 60ml buttermilk , 300g mayonnaise, 1/2 cup coarsely torn flat-leaf parsley leaves.

Ingredients:

  • 1 Spanish onion, halved, very thinly sliced 
  • 60ml cider vinegar 
  • 600g each chat and kipfler potatoes 
  • 2 tsp brown mustard seeds, toasted 
  • 1 tsp cumin seeds, toasted 
  • 1 tsp caraway seeds 
  • 1/2 tsp celery seeds 
  • 60ml buttermilk 
  • 300g mayonnaise 
  • 1/2 cup coarsely torn flat-leaf parsley leaves 

Instructions

  1. Combine onion, half the vinegar and 1 teaspoon each sea salt and caster sugar in a bowl, then set aside for 15 minutes.
  2. Cook chats and kipflers separately in boiling salted water until tender, then drain and cool slightly. Peel kipflers and cut into 2cm-thick slices. Halve chats.
  3. Whisk seeds together with remaining vinegar, buttermilk and mayonnaise until combined. Drain onion mixture, then toss in a bowl with warm potatoes, dressing and parsley leaves.
