Watercress and celery salad

This simple summer salad makes a light and lovely side.

To make this dish at home by prescription from the author Gomer would need: 3 celery stalks, trimmed, 100g watercress, trimmed, washed, 1 large avocado, halved, thinly sliced, 1 Lebanese cucumber, cut into 1cm cubes, 2 tbsp olive oil , 2 tbsp white vinegar, 1 tsp dijon mustard .
Ingredients:
- 3 celery stalks, trimmed
- 100g watercress, trimmed, washed
- 1 large avocado, halved, thinly sliced
- 1 Lebanese cucumber, cut into 1cm cubes
- 2 tbsp olive oil
- 2 tbsp white vinegar
- 1 tsp dijon mustard
Instructions
- Using a vegetable peeler or small sharp knife, cut celery lengthways into thin strips. Place in a bowl. Add watercress, avocado and cucumber. Toss to combine.
- Place oil, vinegar and mustard in a screw-top jar. Season with salt and pepper. Secure lid. Shake well to combine. Pour dressing over salad. Toss to combine. Serve.
