To make this dish at home by prescription from the author Gomer would need: 215g shelled fresh peas, 180g snow peas, topped, halved diagonally, 180g sugar snap peas, topped, 2 tbsp olive oil, 1 tbsp red wine vinegar , Pinch of caster sugar, 3 tsp finely shredded fresh mint, Salt & freshly ground black pepper , 100g feta, crumbled.

Ingredients:

  • 215g shelled fresh peas 
  • 180g snow peas, topped, halved diagonally 
  • 180g sugar snap peas, topped 
  • 2 tbsp olive oil 
  • 1 tbsp red wine vinegar 
  • Pinch of caster sugar 
  • 3 tsp finely shredded fresh mint 
  • Salt & freshly ground black pepper 
  • 100g feta, crumbled 

Instructions

  1. Cook the peas in a large saucepan of boiling water for 4 minutes. Add snow peas and sugar snap peas and cook for 1 minute or until bright green and tender crisp. Refresh under cold running water.
  2. Whisk together the oil, vinegar and sugar in a small bowl. Add the mint and season with salt and pepper.
  3. Place the peas and feta in a large bowl. Drizzle with dressing and toss to combine.
