Salmon, avocado and asparagus salad

This salmon salad takes only 10 minutes to make - Perfect!

To make this dish at home by prescription from the author Gomer would need: 1 bunch asparagus, trimmed, cut into 4cm lengths, 100g snow pea sprouts, trimmed, 1 telegraph cucumber, chopped, 1 avocado, cubed, 415g can red salmon, drained, skin removed, broken into large chunks , 2 tbsp light sour cream, 2 tbsp whole-egg mayonnaise, 1 tbsp hot water , 2 tsp lemon juice, 1 tbsp finely chopped dill.
Ingredients:
- 1 bunch asparagus, trimmed, cut into 4cm lengths
- 100g snow pea sprouts, trimmed
- 1 telegraph cucumber, chopped
- 1 avocado, cubed
- 415g can red salmon, drained, skin removed, broken into large chunks
- 2 tbsp light sour cream
- 2 tbsp whole-egg mayonnaise
- 1 tbsp hot water
- 2 tsp lemon juice
- 1 tbsp finely chopped dill
Instructions
- Cook asparagus in a saucepan of boiling salted water for 1 to 2 minutes or until bright green and just tender (see shortcut). Drain. Rinse under cold water to refresh. Pat dry with paper towels.
- Place asparagus, sprouts, cucumber, avocado and salmon into a bowl. Toss to combine.
- Make dressing: Whisk together sour cream, mayonnaise, water and lemon juice. Stir in dill. Season with salt and pepper.
- Drizzle salad with dressing. Serve.
