To make this dish at home by prescription from the author Gomer would need: 1 bunch asparagus, trimmed, cut into 4cm lengths, 100g snow pea sprouts, trimmed, 1 telegraph cucumber, chopped, 1 avocado, cubed, 415g can red salmon, drained, skin removed, broken into large chunks , 2 tbsp light sour cream, 2 tbsp whole-egg mayonnaise, 1 tbsp hot water , 2 tsp lemon juice, 1 tbsp finely chopped dill.

Ingredients:

  • 1 bunch asparagus, trimmed, cut into 4cm lengths 
  • 100g snow pea sprouts, trimmed 
  • 1 telegraph cucumber, chopped 
  • 1 avocado, cubed 
  • 415g can red salmon, drained, skin removed, broken into large chunks 
  • 2 tbsp light sour cream 
  • 2 tbsp whole-egg mayonnaise 
  • 1 tbsp hot water 
  • 2 tsp lemon juice 
  • 1 tbsp finely chopped dill 

Instructions

  1. Cook asparagus in a saucepan of boiling salted water for 1 to 2 minutes or until bright green and just tender (see shortcut). Drain. Rinse under cold water to refresh. Pat dry with paper towels.
  2. Place asparagus, sprouts, cucumber, avocado and salmon into a bowl. Toss to combine.
  3. Make dressing: Whisk together sour cream, mayonnaise, water and lemon juice. Stir in dill. Season with salt and pepper.
  4. Drizzle salad with dressing. Serve.
