Chicken schnitzel with apple salad

30 minutes is all you need to make this golden baked chicken schnitzel served with a fresh apple and radish salad.

To make this dish at home by prescription from the author Gomer would need: 4 Coles RSPCA Approved Chicken Breast Schnitzels, 1 Granny Smith apple, thinly sliced crossways, 2 spring onions, thinly sliced, 1 bunch radishes, trimmed, thinly sliced, 120g pkt Coles Australian Baby Rocket , 1 tbsp basil, chopped, 2 tbsp red wine vinegar, 1 tbsp honey , 1 tbsp olive oil, Lemon wedges, to serve.

Ingredients:

  • 4 Coles RSPCA Approved Chicken Breast Schnitzels 
  • 1 Granny Smith apple, thinly sliced crossways 
  • 2 spring onions, thinly sliced 
  • 1 bunch radishes, trimmed, thinly sliced 
  • 120g pkt Coles Australian Baby Rocket 
  • 1 tbsp basil, chopped 
  • 2 tbsp red wine vinegar 
  • 1 tbsp honey 
  • 1 tbsp olive oil 
  • Lemon wedges, to serve 

Instructions

  1. Preheat oven to 200C. Line a large baking tray with baking paper. Cook the chicken schnitzels following packet directions.
  2. Meanwhile, combine the apple, spring onion, radish and rocket in a large bowl. Combine the basil, vinegar, honey and olive oil in a small bowl. Drizzle over the apple mixture. Season.
  3. Serve the chicken schnitzels with the apple salad and lemon wedges.
