To make this dish at home by prescription from the author Gomer would need: 1/4 cup olive oil, 125g parmesan cheese, grated, 1 garlic clove, crushed, 2 slices bread, 4 rashers bacon, rind removed, chopped , 2 chicken breasts, sliced, 1 large cos lettuce, leaves removed, washed, dried, shredded, 1 punnet cherry tomatoes, halved , 1/4 cup olive oil, 1 garlic clove, crushed, 3 tbsp mayonnaise, 2 tsp Worcestershire sauce, 1 tbsp lemon juice, 1 tsp caster sugar.

Ingredients:

  • 1/4 cup olive oil 
  • 125g parmesan cheese, grated 
  • 1 garlic clove, crushed 
  • 2 slices bread 
  • 4 rashers bacon, rind removed, chopped 
  • 2 chicken breasts, sliced 
  • 1 large cos lettuce, leaves removed, washed, dried, shredded 
  • 1 punnet cherry tomatoes, halved 
  • 1/4 cup olive oil 
  • 1 garlic clove, crushed 
  • 3 tbsp mayonnaise 
  • 2 tsp Worcestershire sauce 
  • 1 tbsp lemon juice 
  • 1 tsp caster sugar 

Instructions

  1. Preheat oven to 180°C.
  2. Combine 2 tablespoons of oil, half the cheese and garlic. Spread over bread. Bake for 5 to 7 minutes, or until crisp. Cool. Cut into cubes. Set aside.
  3. Make dressing: Combine all ingredients in a screw-top jar. Shake well to combine.
  4. Heat a frying pan over medium-high heat. Add bacon. Cook for 4 minutes. Set aside. Add remaining oil and chicken to frying pan. Cook for 3 minutes.
  5. Combine croutons, bacon, chicken, lettuce, tomatoes and dressing. Toss. Add remaining cheese. Season and serve.
