Ingredients:

  • 1/3 cup olive oil, 
  • 2 tbsp fresh lime juice, 
  • 1/2 tsp finely grated lime rind 
  • 1 garlic clove, crushed 
  • 1 small red chilli, deseeded, finely chopped 
  • 1/2 tsp caster sugar 
  • 300g button mushrooms, quartered 
  • 200g sundried tomatoes 
  • 1/2 red onion, sliced 
  • 1 avocado, peeled, chopped 
  • 80g baby rocket. 

Instructions

  1. Whisk 1/3 cup olive oil, 2 tablespoons fresh lime juice, 1/2 teaspoon finely grated lime rind, 1 garlic clove, crushed, 1 small red chilli, deseeded, finely chopped, 1/2 teaspoon caster sugar. Season.
  2. Place 300g button mushrooms, quartered, in a large bowl. Add the dressing and toss until well coated. Cover and place in fridge 1-2 hours to marinate.
  3. Add 200g sundried tomatoes, 1/2 red onion, sliced, 1 avocado, peeled, chopped, and 80g baby rocket. Toss to combine just before serving.
