To make this dish at home by prescription from the author Gomer would need: 2 witlof, trimmed, cut widthwise into thick slices, 1 celery heart, thinly sliced, 1 bunch radishes, trimmed, coarsely grated, 1/2 small iceberg lettuce, finely shredded, 1/2 bunch flat-leaf parsley, roughly chopped , 1/4 savoy cabbage, finely shredded, 140g roasted peeled hazelnuts, roughly chopped, 100ml extra virgin olive oil , 2 1/2 tbsp red wine vinegar, 2 eschalots, finely chopped.

Ingredients:

  • 2 witlof, trimmed, cut widthwise into thick slices 
  • 1 celery heart, thinly sliced 
  • 1 bunch radishes, trimmed, coarsely grated 
  • 1/2 small iceberg lettuce, finely shredded 
  • 1/2 bunch flat-leaf parsley, roughly chopped 
  • 1/4 savoy cabbage, finely shredded 
  • 140g roasted peeled hazelnuts, roughly chopped 
  • 100ml extra virgin olive oil 
  • 2 1/2 tbsp red wine vinegar 
  • 2 eschalots, finely chopped 

Instructions

  1. Place witlof, celery, radishes, lettuce, parsley, cabbage and nuts in a bowl.
  2. To make dressing, whisk remaining ingredients in a separate bowl, season with salt and pepper, then toss with salad. Serve with meatballs (see related recipe).
