To make this dish at home by prescription from the author Gomer would need: 2 witlof, trimmed, cut widthwise into thick slices, 1 celery heart, thinly sliced, 1 bunch radishes, trimmed, coarsely grated, 1/2 small iceberg lettuce, finely shredded, 1/2 bunch flat-leaf parsley, roughly chopped , 1/4 savoy cabbage, finely shredded, 140g roasted peeled hazelnuts, roughly chopped, 100ml extra virgin olive oil , 2 1/2 tbsp red wine vinegar, 2 eschalots, finely chopped.
Ingredients:
- 2 witlof, trimmed, cut widthwise into thick slices
- 1 celery heart, thinly sliced
- 1 bunch radishes, trimmed, coarsely grated
- 1/2 small iceberg lettuce, finely shredded
- 1/2 bunch flat-leaf parsley, roughly chopped
- 1/4 savoy cabbage, finely shredded
- 140g roasted peeled hazelnuts, roughly chopped
- 100ml extra virgin olive oil
- 2 1/2 tbsp red wine vinegar
- 2 eschalots, finely chopped
Instructions
- Place witlof, celery, radishes, lettuce, parsley, cabbage and nuts in a bowl.
- To make dressing, whisk remaining ingredients in a separate bowl, season with salt and pepper, then toss with salad. Serve with meatballs (see related recipe).
