To make this dish at home by prescription from the author Gomer would need: 750g can tiny taters potatoes, drained, diced, 3 gherkins, chopped, 2 green onions, thinly sliced, 1 tbsp capers, drained, chopped, 2 hard-boiled eggs, finely chopped , 310g can corn kernels, drained, rinsed, 2 tbsp chopped fresh flat-leaf parsley leaves, 1/4 cup caesar dressing .

Ingredients:

  • 750g can tiny taters potatoes, drained, diced 
  • 3 gherkins, chopped 
  • 2 green onions, thinly sliced 
  • 1 tbsp capers, drained, chopped 
  • 2 hard-boiled eggs, finely chopped 
  • 310g can corn kernels, drained, rinsed 
  • 2 tbsp chopped fresh flat-leaf parsley leaves 
  • 1/4 cup caesar dressing 

Instructions

  1. Place potato, gherkin, onion, capers, egg, corn and half the parsley in a large bowl. Add dressing. Season with salt and pepper. Toss gently to combine. Serve topped with remaining parsley.
