To make this dish at home by prescription from the author Gomer would need: 1 95g can tuna in oil , drained, 1 Lebanese cucumber, halved, deseeded, cut into 1cm slices, 1 tomato, roughly chopped, 50g rocket leaves, ends trimmed, washed, dried, roughly chopped, 50g feta, cut into 1cm pieces , 2 tbsp extra virgin olive oil, 1 1/2 tbsp fresh lemon juice, 2 tbsp coarsely chopped fresh continental parsley , Salt & freshly ground black pepper, Crusty bread , to serve.
Ingredients:
- 1 95g can tuna in oil , drained
- 1 Lebanese cucumber, halved, deseeded, cut into 1cm slices
- 1 tomato, roughly chopped
- 50g rocket leaves, ends trimmed, washed, dried, roughly chopped
- 50g feta, cut into 1cm pieces
- 2 tbsp extra virgin olive oil
- 1 1/2 tbsp fresh lemon juice
- 2 tbsp coarsely chopped fresh continental parsley
- Salt & freshly ground black pepper
- Crusty bread , to serve
Instructions
- Flake the tuna and place in a medium bowl with the cucumber, tomato, rocket and feta.
- Use a fork to whisk together the oil, lemon juice and parsley in a small bowl until well combined. Taste and season with salt and pepper.
- Pour the lemon dressing over the tuna salad and gently toss until well combined. Serve immediately with crusty bread, if desired.
