To make this dish at home by prescription from the author Gomer would need: 1 95g can tuna in oil , drained, 1 Lebanese cucumber, halved, deseeded, cut into 1cm slices, 1 tomato, roughly chopped, 50g rocket leaves, ends trimmed, washed, dried, roughly chopped, 50g feta, cut into 1cm pieces , 2 tbsp extra virgin olive oil, 1 1/2 tbsp fresh lemon juice, 2 tbsp coarsely chopped fresh continental parsley , Salt & freshly ground black pepper, Crusty bread , to serve.

Ingredients:

  • 1 95g can tuna in oil , drained 
  • 1 Lebanese cucumber, halved, deseeded, cut into 1cm slices 
  • 1 tomato, roughly chopped 
  • 50g rocket leaves, ends trimmed, washed, dried, roughly chopped 
  • 50g feta, cut into 1cm pieces 
  • 2 tbsp extra virgin olive oil 
  • 1 1/2 tbsp fresh lemon juice 
  • 2 tbsp coarsely chopped fresh continental parsley 
  • Salt & freshly ground black pepper 
  • Crusty bread , to serve 

Instructions

  1. Flake the tuna and place in a medium bowl with the cucumber, tomato, rocket and feta.
  2. Use a fork to whisk together the oil, lemon juice and parsley in a small bowl until well combined. Taste and season with salt and pepper.
  3. Pour the lemon dressing over the tuna salad and gently toss until well combined. Serve immediately with crusty bread, if desired.
