This beautiful prawn and potato salad is at home on any table - from gourmet occasion to low-key affair.

To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 1 tbsp MasterFoods lemon pepper seasoning, 600g kipfler potatoes, scrubbed, roughly chopped, 700g medium cooked prawns, peeled, deveined, 2 celery stalks, trimmed, thinly sliced , 1/2 small red onion, thinly sliced, 1 baby cos lettuce, leaves separated, torn, 1/4 cup small fresh mint leaves , 1/2 cup whole-egg mayonnaise, 1 garlic clove, crushed, 1/3 cup sour cream, 2 tbsp finely chopped fresh dill, 2 tbsp finely chopped fresh mint leaves.
Ingredients:
- 1 tbsp olive oil
- 1 tbsp MasterFoods lemon pepper seasoning
- 600g kipfler potatoes, scrubbed, roughly chopped
- 700g medium cooked prawns, peeled, deveined
- 2 celery stalks, trimmed, thinly sliced
- 1/2 small red onion, thinly sliced
- 1 baby cos lettuce, leaves separated, torn
- 1/4 cup small fresh mint leaves
- 1/2 cup whole-egg mayonnaise
- 1 garlic clove, crushed
- 1/3 cup sour cream
- 2 tbsp finely chopped fresh dill
- 2 tbsp finely chopped fresh mint leaves
Instructions
- Preheat oven to 200C/180C fan-forced. Place oil, seasoning and potato on a baking tray. Toss to coat. Roast for 35 minutes or until golden and tender. Cool.
- Make dressing Combine 1/4 cup cold water, mayonnaise, garlic, sour cream, dill and chopped mint in a bowl.
- Place potato, prawns, celery, onion, lettuce and mint leaves in a large bowl. Toss to coat. Serve with dressing.
