This salad gives a fresh twist to the UK classic coronation chicken.

To make this dish at home by prescription from the author Gomer would need: 200g sour cream, 1 tsp honey, 1 tbsp mild curry paste, Juice of 1/2 lemon, 1 large barbecue chicken, meat shredded , 150g watercress sprigs, 1 cup mint leaves, 350g cherries, pitted , 6 spring onions, shredded, 1 cup toasted almonds.

Ingredients:

  • 200g sour cream 
  • 1 tsp honey 
  • 1 tbsp mild curry paste 
  • Juice of 1/2 lemon 
  • 1 large barbecue chicken, meat shredded 
  • 150g watercress sprigs 
  • 1 cup mint leaves 
  • 350g cherries, pitted 
  • 6 spring onions, shredded 
  • 1 cup toasted almonds 

Instructions

  1. Combine the sour cream, honey, curry paste and lemon juice in a bowl and season. (If the dressing is too thick, loosen with 2-3 tablespoons water.)
  2. Toss the chicken, watercress, mint, cherries, spring onion and almonds together, then divide among plates and drizzle with dressing.
