This salad gives a fresh twist to the UK classic coronation chicken.

To make this dish at home by prescription from the author Gomer would need: 200g sour cream, 1 tsp honey, 1 tbsp mild curry paste, Juice of 1/2 lemon, 1 large barbecue chicken, meat shredded , 150g watercress sprigs, 1 cup mint leaves, 350g cherries, pitted , 6 spring onions, shredded, 1 cup toasted almonds.
Ingredients:
- 200g sour cream
- 1 tsp honey
- 1 tbsp mild curry paste
- Juice of 1/2 lemon
- 1 large barbecue chicken, meat shredded
- 150g watercress sprigs
- 1 cup mint leaves
- 350g cherries, pitted
- 6 spring onions, shredded
- 1 cup toasted almonds
Instructions
- Combine the sour cream, honey, curry paste and lemon juice in a bowl and season. (If the dressing is too thick, loosen with 2-3 tablespoons water.)
- Toss the chicken, watercress, mint, cherries, spring onion and almonds together, then divide among plates and drizzle with dressing.
