Green salad with spicy pepitas

To make this dish at home by prescription from the author Gomer would need: 80g pepitas, 2 tbsp vegetable oil, 1 tbsp Cajun seasoning, 60ml fresh lemon or lime juice, 2 garlic cloves, crushed , 60ml vegetable oil, extra, 200g mixed salad leaves, 1 large avocado, halved, stone removed, peeled, cut into 2cm pieces , 1 Lebanese cucumber, peeled into ribbons, 1 small red onion, halved, thinly sliced, 1 celery stick, trimmed, thinly sliced diagonally.
Ingredients:
- 80g pepitas
- 2 tbsp vegetable oil
- 1 tbsp Cajun seasoning
- 60ml fresh lemon or lime juice
- 2 garlic cloves, crushed
- 60ml vegetable oil, extra
- 200g mixed salad leaves
- 1 large avocado, halved, stone removed, peeled, cut into 2cm pieces
- 1 Lebanese cucumber, peeled into ribbons
- 1 small red onion, halved, thinly sliced
- 1 celery stick, trimmed, thinly sliced diagonally
Instructions
- Preheat oven to 180ºC. Line a baking tray with non-stick baking paper. Place pepitas, oil and Cajun seasoning in a bowl and toss to coat. Spread over the prepared tray and bake for 6-8 minutes or until lightly browned. Set aside to cool slightly.
- Combine the lemon or lime juice, garlic and extra oil in a small bowl. Season with salt and pepper. Place the salad leaves, avocado, cucumber, onion, celery and pepitas in a large bowl. Drizzle with the dressing and gently toss to combine.
