The classic Japanese flavours of avocado and salmon are re-invented in this healthy salad.

To make this dish at home by prescription from the author Gomer would need: 2 tbsp sesame seeds, 2 avocados, peeled and sliced, 200g baby spinach leaves, 300g smoked salmon, thinly sliced, 1/4 cup mirin , 1/4 cup reduced-salt soy sauce, 1 tbsp caster sugar, 2 tbsp vegetable oil .

Ingredients:

  • 2 tbsp sesame seeds 
  • 2 avocados, peeled and sliced 
  • 200g baby spinach leaves 
  • 300g smoked salmon, thinly sliced 
  • 1/4 cup mirin 
  • 1/4 cup reduced-salt soy sauce 
  • 1 tbsp caster sugar 
  • 2 tbsp vegetable oil 

Instructions

  1. Place sesame seeds into a frying pan. Cook over medium heat, stirring often, for 2 to 3 minutes or until golden. Remove to a plate.
  2. To make dressing: Combine ingredients in a frying pan. Heat over medium-high heat for 1 to 2 minutes or until bubbling.
  3. Arrange avocado and spinach on plates. Top with salmon. Drizzle with dressing and sprinkle with toasted seeds and serve.
