This colourful noodle side salad is dressed in a spicy Thai-style dressing.

To make this dish at home by prescription from the author Gomer would need: 250g packet dried rice stick noodles, 2 small carrots, 2 small zucchini, 1 red capsicum, 1 leek , 2 sticks celery, 100g snow pea sprouts, trimmed, 4 red radishes, thinly sliced , 1/3 cup fresh coriander leaves, 1/3 cup fresh mint leaves, shredded, 1 red chilli, finely chopped, 2 limes, juiced, 2 tbsp sweet soy sauce, 1 tbsp fish sauce, 1 tbsp mirin, 1 tbsp brown sugar.
Ingredients:
- 250g packet dried rice stick noodles
- 2 small carrots
- 2 small zucchini
- 1 red capsicum
- 1 leek
- 2 sticks celery
- 100g snow pea sprouts, trimmed
- 4 red radishes, thinly sliced
- 1/3 cup fresh coriander leaves
- 1/3 cup fresh mint leaves, shredded
- 1 red chilli, finely chopped
- 2 limes, juiced
- 2 tbsp sweet soy sauce
- 1 tbsp fish sauce
- 1 tbsp mirin
- 1 tbsp brown sugar
Instructions
- Cook noodles following packet directions. Drain and refresh under cold water. Place into a large bowl.
- Cut carrots, zucchini, capsicum, leek and celery into thin strips. Add to noodles with sprouts, radishes and herbs.
- Make dressing: Place all ingredients into a jug. Whisk with fork to combine.
- Add dressing to salad. Toss well & serve.
