This spud salad bursts with flavour thanks to capers and prosciutto.

To make this dish at home by prescription from the author Gomer would need: 1.5kg small chat potatoes, halved, 1/4 cup capers, rinsed, chopped, 100g thinly-sliced prosciutto, 6 green onions, thinly sliced, 1/3 cup chopped fresh flat-leaf parsley leaves , 1/4 cup olive oil, 2 tbsp white wine vinegar, 2 tsp dijon mustard .

Ingredients:

  • 1.5kg small chat potatoes, halved 
  • 1/4 cup capers, rinsed, chopped 
  • 100g thinly-sliced prosciutto 
  • 6 green onions, thinly sliced 
  • 1/3 cup chopped fresh flat-leaf parsley leaves 
  • 1/4 cup olive oil 
  • 2 tbsp white wine vinegar 
  • 2 tsp dijon mustard 

Instructions

  1. Cook potatoes, uncovered, in a large saucepan of boiling, salted water for 10 to 15 minutes or until just tender. Drain.
  2. Make dressing: Combine ingredients in a screw-top jar. Season with pepper. Secure lid. Shake to combine.
  3. Place potatoes in a large bowl. Add capers and dressing. Toss gently to combine. Set aside to cool.
  4. Place prosciutto in a large, non-stick frying pan over medium heat. Cook for 2 minutes each side or until crisp. Remove to a plate lined with paper towel. Break into pieces.
  5. Add green onions, parsley and prosciutto to potato mixture. Toss to combine. Serve.
