This traditional French Salad Lyonnaise makes a fresh & delicious meal for lunch or dinner.

To make this dish at home by prescription from the author Gomer would need: 4 medium potatoes, peeled, thickly sliced, 100g sliced prosciutto, from the deli, 1 tbsp olive oil, 12 small shallots, peeled, 2 tbsp Coles brand Mediterranean balsamic vinegar , 4 eggs, poached, 1 tbsp Coles brand brown sugar, 120g pkt Coles brand 4 leaf salad mix .

Ingredients:

  • 4 medium potatoes, peeled, thickly sliced 
  • 100g sliced prosciutto, from the deli 
  • 1 tbsp olive oil 
  • 12 small shallots, peeled 
  • 2 tbsp Coles brand Mediterranean balsamic vinegar 
  • 4 eggs, poached 
  • 1 tbsp Coles brand brown sugar 
  • 120g pkt Coles brand 4 leaf salad mix 

Instructions

  1. Preheat oven to 200C or 180C fan. Line 2 baking trays with baking paper. Steam or microwave potato for 5 mins, until partially cooked. Lay potato, in a single layer on 1 of the prepared trays and bake for 15 mins or until golden. Lay prosciutto on the other prepared tray and bake for 5-7 mins or until crisp.
  2. Meanwhile, heat oil in a frying pan over medium heat. Cook shallots for 5 mins, until golden. Add vinegar and brown sugar and simmer, stirring, for 1-2 mins or until caramelised.
  3. Arrange salad leaves on a large platter. Scatter over potato and half the caramelised shallots. Break prosciutto into shards and scatter over salad. Top with eggs and serve with remaining shallots.
