Crisp daikon and onion sprouts add a satisfying crunch to this salad, while smoked salmon adds gourmet flair.

To make this dish at home by prescription from the author Gomer would need: 1 small daikon, peeled, 1/2 cup orange juice, 1 tbsp sherry vinegar, 1/2 cup extra virgin olive oil, 4 cups wild rocket , 3 cups lambs tongue lettuce, washed, 4 radishes, thinly sliced, 1 cup onion sprouts , 350g smoked salmon, slices.

Ingredients:

  • 1 small daikon, peeled 
  • 1/2 cup orange juice 
  • 1 tbsp sherry vinegar 
  • 1/2 cup extra virgin olive oil 
  • 4 cups wild rocket 
  • 3 cups lambs tongue lettuce, washed 
  • 4 radishes, thinly sliced 
  • 1 cup onion sprouts 
  • 350g smoked salmon, slices 

Instructions

  1. Thinly slice daikon lengthways, then thinly slice lengthways into 3mm strips. Place in a medium bowl and over with cold water. Set aside for 5 minutes or until crisp. Refresh under cold running water. Drain well.
  2. Whisk orange juice, vinegar and oil together in a small bowl. Season with salt and pepper.
  3. Combine the rocket, lambs tongue lettuce, radish and onion sprouts in a large bowl. Arrange the salad and salmon in layers on serving plates. Drizzle with dressing and serve immediately.
