Use your barbecue to chargrill zucchini. They make a great side dish and are budget-friendly too.

Ingredients:

  • 2 tbsp olive oil 
  • 3 zucchini, ends trimmed, cut diagonally into 1cm-thick slices 
  • 2 red onions, halved, cut into wedges 
  • 1 1/2 cups fresh continental parsley leaves 
  • 2 tbsp red wine vinegar 

Instructions

  1. Preheat a barbecue grill or chargrill on medium-high. Brush with the oil to grease. Add the zucchini and cook for 2 minutes each side or until lightly charred. Transfer to a serving bowl. Add the onion to the grill and cook for 2 minutes each side. Transfer to the bowl.
  2. Add the parsley and vinegar to the zucchini mixture and toss to combine. Season with salt and pepper to serve.
