To make this dish at home by prescription from the author Gomer would need: 2 bunches asparagus, woody ends trimmed, halved diagonally, 230g frozen baby peas, 60ml fresh lemon juice, 3 tsp extra virgin olive oil, 1 tsp Dijon mustard , 1/2 tsp raw sugar, 1 x 150g pkt baby spinach leaves .

Ingredients:

  • 2 bunches asparagus, woody ends trimmed, halved diagonally 
  • 230g frozen baby peas 
  • 60ml fresh lemon juice 
  • 3 tsp extra virgin olive oil 
  • 1 tsp Dijon mustard 
  • 1/2 tsp raw sugar 
  • 1 x 150g pkt baby spinach leaves 

Instructions

  1. Bring a medium saucepan of water to the boil over high heat. Add the asparagus and peas, and cook for 2-3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain.
  2. Whisk together the lemon juice, oil, mustard and sugar in a small jug. Season with salt and pepper.
  3. Place the asparagus, peas and spinach in a large serving bowl. Drizzle over the dressing and toss until well combined. Serve immediately.
