To make this dish at home by prescription from the author Gomer would need: 1 cup frozen broad beans, 1/3 cup frozen peas, 2 ruby red grapefruit, 60g baby rocket, 60g baby spinach , 1 avocado, halved, chopped, 2 tbsp pepitas, toasted, 2 tbsp extra virgin olive oil , 1 tsp dijon mustard.

Ingredients:

  • 1 cup frozen broad beans 
  • 1/3 cup frozen peas 
  • 2 ruby red grapefruit 
  • 60g baby rocket 
  • 60g baby spinach 
  • 1 avocado, halved, chopped 
  • 2 tbsp pepitas, toasted 
  • 2 tbsp extra virgin olive oil 
  • 1 tsp dijon mustard 

Instructions

  1. Cook broad beans and peas separately following packet directions. Drain. Refresh under cold water. Peel broad beans and discard skins.
  2. Peel grapefruit and segment (see notes). Squeeze leftover membranes over a bowl to catch the juice (you will need 2 tablespoons juice). Discard membranes.
  3. Arrange rocket, spinach, avocado, grapefruit segments, broad beans, peas and pepitas on a serving plate.
  4. Whisk grapefruit juice, oil, mustard and salt and pepper in a small bowl. Drizzle over salad. Serve.
