To make this dish at home by prescription from the author Gomer would need: 1 barbecue chicken, skin and bones removed, meat shredded, 1 small red onion, thinly sliced, 3/4 cup fresh coriander sprigs, 1/2 cup fresh mint leaves, 2 long fresh red chillies, thinly sliced , 600g piece papaya, deseeded, peeled, cut into wedges, 2 tbsp roasted peanuts, salted, chopped, 2 tbsp fresh lime juice , 2 tbsp brown sugar, 1 1/2 tbsp fish sauce.

Ingredients:

  • 1 barbecue chicken, skin and bones removed, meat shredded 
  • 1 small red onion, thinly sliced 
  • 3/4 cup fresh coriander sprigs 
  • 1/2 cup fresh mint leaves 
  • 2 long fresh red chillies, thinly sliced 
  • 600g piece papaya, deseeded, peeled, cut into wedges 
  • 2 tbsp roasted peanuts, salted, chopped 
  • 2 tbsp fresh lime juice 
  • 2 tbsp brown sugar 
  • 1 1/2 tbsp fish sauce 

Instructions

  1. For the dressing, stir the ingredients in a small bowl until the sugar dissolves. Season with a pinch of salt. Set aside.
  2. Combine the chicken, onion, coriander, mint and chilli in a bowl. Add three-quarters of the dressing and toss to combine.
  3. Arrange chicken mixture and papaya on a platter. Drizzle with the remaining dressing and sprinkle with peanuts.
