Fig and prosciutto salad

An easy, gluten-free starter bursting with the fresh flavours of fig, walnut, witlof and prosciutto - ready in 15 minutes!

To make this dish at home by prescription from the author Gomer would need: 2 witlof, 4 slices prosciutto, 4 fresh figs, quartered, 50g walnuts, toasted, 50g pecorino, thinly shaved , 80ml walnut oil, 2 tbsp extra virgin olive oil, 1 tbsp Maggie Beer Verjuice , 1 tbsp fresh chives, finely chopped, 1 tsp Dijon mustard.
Ingredients:
- 2 witlof
- 4 slices prosciutto
- 4 fresh figs, quartered
- 50g walnuts, toasted
- 50g pecorino, thinly shaved
- 80ml walnut oil
- 2 tbsp extra virgin olive oil
- 1 tbsp Maggie Beer Verjuice
- 1 tbsp fresh chives, finely chopped
- 1 tsp Dijon mustard
Instructions
- Trim witlof. Halve. Cut diagonally into thick slices. Place witlof, prosciutto, fig and walnuts in a large bowl. Sprinkle with cheese.
- Whisk dressing ingredients in a bowl. Toss through salad to combine.
