An easy, gluten-free starter bursting with the fresh flavours of fig, walnut, witlof and prosciutto - ready in 15 minutes!

To make this dish at home by prescription from the author Gomer would need: 2 witlof, 4 slices prosciutto, 4 fresh figs, quartered, 50g walnuts, toasted, 50g pecorino, thinly shaved , 80ml walnut oil, 2 tbsp extra virgin olive oil, 1 tbsp Maggie Beer Verjuice , 1 tbsp fresh chives, finely chopped, 1 tsp Dijon mustard.

Ingredients:

  • 2 witlof 
  • 4 slices prosciutto 
  • 4 fresh figs, quartered 
  • 50g walnuts, toasted 
  • 50g pecorino, thinly shaved 
  • 80ml walnut oil 
  • 2 tbsp extra virgin olive oil 
  • 1 tbsp Maggie Beer Verjuice 
  • 1 tbsp fresh chives, finely chopped 
  • 1 tsp Dijon mustard 

Instructions

  1. Trim witlof. Halve. Cut diagonally into thick slices. Place witlof, prosciutto, fig and walnuts in a large bowl. Sprinkle with cheese.
  2. Whisk dressing ingredients in a bowl. Toss through salad to combine.
