A refreshing vegan side salad packed with healthy vegetables, lime and coriander.

To make this dish at home by prescription from the author Gomer would need: 1 tbsp vegetable oil, 2 tsp cumin seeds, 1/4 red onion, thinly sliced, 2 Lebanese cucumbers, halved, sliced, 6 radishes, halved, sliced , 400g can Coles Brand Chickpeas, rinsed, drained, 400g can Coles Brand Lentils, rinsed, drained, 2/3 cup coriander, chopped plus extra leaves, to serve , 1 1/2 tbsp lime juice.

Ingredients:

  • 1 tbsp vegetable oil 
  • 2 tsp cumin seeds 
  • 1/4 red onion, thinly sliced 
  • 2 Lebanese cucumbers, halved, sliced 
  • 6 radishes, halved, sliced 
  • 400g can Coles Brand Chickpeas, rinsed, drained 
  • 400g can Coles Brand Lentils, rinsed, drained 
  • 2/3 cup coriander, chopped plus extra leaves, to serve 
  • 1 1/2 tbsp lime juice 

Instructions

  1. Heat the oil in a medium frying pan over medium heat. Cook the cumin seeds for 1 min or until fragrant. Cool.
  2. Place onion, cucumber, radish, chickpeas, lentils, chopped coriander and lime juice in a bowl. Drizzle with cumin mixture. Season. Toss to combine. Top with coriander leaves.
