To make this dish at home by prescription from the author Gomer would need: 400g baby tomato medley, halved, 2 Lebanese cucumbers, halved lengthways, sliced, 1 red capsicum, deseeded, chopped, 1 red onion, cut into thin wedges, 1 tbs currants , 1/2 cup chopped fresh continental parsley, 2 tbs olive oil, 1 lemon , 50g plain ready-to-eat mini pappadums, broken into pieces, 200g goat's cheese, crumbled, Micro herbs, to serve.
Ingredients:
- 400g baby tomato medley, halved
- 2 Lebanese cucumbers, halved lengthways, sliced
- 1 red capsicum, deseeded, chopped
- 1 red onion, cut into thin wedges
- 1 tbs currants
- 1/2 cup chopped fresh continental parsley
- 2 tbs olive oil
- 1 lemon
- 50g plain ready-to-eat mini pappadums, broken into pieces
- 200g goat's cheese, crumbled
- Micro herbs, to serve
Instructions
- Place the tomato, cucumber, capsicum, onion, currants and parsley in a large bowl. Toss to combine
- Add the oil. Use a fine grater to grate the rind of the lemon over the salad. Halve the lemon and squeeze over the juice. Season.
- Add pappadums and toss to combine. Sprinkle with goat's cheese and herbs.
