To make this dish at home by prescription from the author Gomer would need: 400g baby tomato medley, halved, 2 Lebanese cucumbers, halved lengthways, sliced, 1 red capsicum, deseeded, chopped, 1 red onion, cut into thin wedges, 1 tbs currants , 1/2 cup chopped fresh continental parsley, 2 tbs olive oil, 1 lemon , 50g plain ready-to-eat mini pappadums, broken into pieces, 200g goat's cheese, crumbled, Micro herbs, to serve.

Ingredients:

  • 400g baby tomato medley, halved 
  • 2 Lebanese cucumbers, halved lengthways, sliced 
  • 1 red capsicum, deseeded, chopped 
  • 1 red onion, cut into thin wedges 
  • 1 tbs currants 
  • 1/2 cup chopped fresh continental parsley 
  • 2 tbs olive oil 
  • 1 lemon 
  • 50g plain ready-to-eat mini pappadums, broken into pieces 
  • 200g goat's cheese, crumbled 
  • Micro herbs, to serve 

Instructions

  1. Place the tomato, cucumber, capsicum, onion, currants and parsley in a large bowl. Toss to combine
  2. Add the oil. Use a fine grater to grate the rind of the lemon over the salad. Halve the lemon and squeeze over the juice. Season.
  3. Add pappadums and toss to combine. Sprinkle with goat's cheese and herbs.
