This fresh and savoury salad is one of the easiest youll ever make.

To make this dish at home by prescription from the author Gomer would need: 100g prosciutto or bacon, 110g cherry bocconcini, halved, 1 cup basil leaves, 50g slivered almond & pine nut mix, toasted, 1/4 cup extra virgin olive oil , 2 tbsp lemon juice, 1 tsp brown sugar, 6 roma tomatoes, quartered , 1 baby cos lettuce, leaves separated.

Ingredients:

  • 100g prosciutto or bacon 
  • 110g cherry bocconcini, halved 
  • 1 cup basil leaves 
  • 50g slivered almond & pine nut mix, toasted 
  • 1/4 cup extra virgin olive oil 
  • 2 tbsp lemon juice 
  • 1 tsp brown sugar 
  • 6 roma tomatoes, quartered 
  • 1 baby cos lettuce, leaves separated 

Instructions

  1. Top tomato with bocconcini and bake for another 2 mins until cheese has just started to melt.
  2. Preheat oven to 180C or 160C fan-forced. Lay prosciutto and tomatoes on a baking tray. Bake 12-15 mins until prosciutto is crisp and tomatoes have just collapsed. Set aside prosciutto.
  3. Toss together baby cos, basil, nut mix and tomatoes. Crumble prosciutto over the top. Add combined Dressing ingredients and toss gently coat.
