This fresh and savoury salad is one of the easiest youll ever make.

To make this dish at home by prescription from the author Gomer would need: 100g prosciutto or bacon, 110g cherry bocconcini, halved, 1 cup basil leaves, 50g slivered almond & pine nut mix, toasted, 1/4 cup extra virgin olive oil , 2 tbsp lemon juice, 1 tsp brown sugar, 6 roma tomatoes, quartered , 1 baby cos lettuce, leaves separated.
Ingredients:
- 100g prosciutto or bacon
- 110g cherry bocconcini, halved
- 1 cup basil leaves
- 50g slivered almond & pine nut mix, toasted
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp brown sugar
- 6 roma tomatoes, quartered
- 1 baby cos lettuce, leaves separated
Instructions
- Top tomato with bocconcini and bake for another 2 mins until cheese has just started to melt.
- Preheat oven to 180C or 160C fan-forced. Lay prosciutto and tomatoes on a baking tray. Bake 12-15 mins until prosciutto is crisp and tomatoes have just collapsed. Set aside prosciutto.
- Toss together baby cos, basil, nut mix and tomatoes. Crumble prosciutto over the top. Add combined Dressing ingredients and toss gently coat.
