Cucumber, mint & feta salad

Starring crisp cucumber, this Greek-style salad is perfect for a fast and fresh side.

To make this dish at home by prescription from the author Gomer would need: 1 small red onion, halved, thinly sliced, 60ml water, 1 tbsp red wine vinegar, 1 tsp salt, 4 Lebanese cucumbers, halved lengthways, thinly sliced diagonally , 1/2 cup fresh mint leaves, coarsely chopped, 1/3 cup fresh continental parsley leaves, coarsely chopped, 60ml fresh lemon juice , 2 tbsp extra virgin olive oil, 1 small garlic clove, crushed, 100g feta, crumbled.
Ingredients:
- 1 small red onion, halved, thinly sliced
- 60ml water
- 1 tbsp red wine vinegar
- 1 tsp salt
- 4 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
- 1/2 cup fresh mint leaves, coarsely chopped
- 1/3 cup fresh continental parsley leaves, coarsely chopped
- 60ml fresh lemon juice
- 2 tbsp extra virgin olive oil
- 1 small garlic clove, crushed
- 100g feta, crumbled
Instructions
- Place the onion, water, vinegar and salt in a bowl. Set aside for 5 minutes to infuse. Drain and rinse under cold running water. Pat dry with paper towel. Place the onion, cucumber, mint and parsley in a bowl.
- Whisk the lemon juice, oil and garlic in a jug. Season with salt and pepper. Drizzle over the salad. Top with the feta.
