To make this dish at home by prescription from the author Gomer would need: 1 small red onion, halved, thinly sliced, 60ml water, 1 tbsp red wine vinegar, 1 tsp salt, 4 Lebanese cucumbers, halved lengthways, thinly sliced diagonally , 1/2 cup fresh mint leaves, coarsely chopped, 1/3 cup fresh continental parsley leaves, coarsely chopped, 60ml fresh lemon juice , 2 tbsp extra virgin olive oil, 1 small garlic clove, crushed, 100g feta, crumbled.

Ingredients:

  • 1 small red onion, halved, thinly sliced 
  • 60ml water 
  • 1 tbsp red wine vinegar 
  • 1 tsp salt 
  • 4 Lebanese cucumbers, halved lengthways, thinly sliced diagonally 
  • 1/2 cup fresh mint leaves, coarsely chopped 
  • 1/3 cup fresh continental parsley leaves, coarsely chopped 
  • 60ml fresh lemon juice 
  • 2 tbsp extra virgin olive oil 
  • 1 small garlic clove, crushed 
  • 100g feta, crumbled 

Instructions

  1. Place the onion, water, vinegar and salt in a bowl. Set aside for 5 minutes to infuse. Drain and rinse under cold running water. Pat dry with paper towel. Place the onion, cucumber, mint and parsley in a bowl.
  2. Whisk the lemon juice, oil and garlic in a jug. Season with salt and pepper. Drizzle over the salad. Top with the feta.
