To make this dish at home by prescription from the author Gomer would need: 1/2 cup extra virgin olive oil, 3 eschalots, finely chopped, 2 anchovy fillets in oil, drained, finely chopped, 1 tsp toasted celery seeds, 1 tsp celery salt , 2 tsp grated lemon zest and 1/4 cup lemon juice, plus extra wedges to serve, 1 bunch celery , thinly sliced, 2 cups flat-leaf parsley leaves, torn , 2 cups mixed micro herbs, 2/3 cup toasted walnuts, 1/2 cup finely grated parmesan.

Ingredients:

  • 1/2 cup extra virgin olive oil 
  • 3 eschalots, finely chopped 
  • 2 anchovy fillets in oil, drained, finely chopped 
  • 1 tsp toasted celery seeds 
  • 1 tsp celery salt 
  • 2 tsp grated lemon zest and 1/4 cup lemon juice, plus extra wedges to serve 
  • 1 bunch celery , thinly sliced 
  • 2 cups flat-leaf parsley leaves, torn 
  • 2 cups mixed micro herbs 
  • 2/3 cup toasted walnuts 
  • 1/2 cup finely grated parmesan 

Instructions

  1. Whisk oil, eschalot, anchovy, celery seeds, salt, lemon zest and juice. Stand for 1 hour.
  2. Combine celery, herbs, walnuts and parmesan in a large bowl, then toss with the dressing. Place salad on a platter and serve with lemon wedges.
