To make this dish at home by prescription from the author Gomer would need: 2 tbsp extra virgin olive oil, 1 tbsp white balsamic vinegar, 1 tbsp wholegrain mustard, 1 bunch rocket, ends trimmed, coarsely torn, 1/4 treviso lettuce, leaves separated, coarsely torn , 1 fennel bulb, trimmed, quartered, thinly sliced, 2 tbsp fresh lemon juice, 1 Red Delicious apple, quartered, cored, thinly sliced .
Ingredients:
- 2 tbsp extra virgin olive oil
- 1 tbsp white balsamic vinegar
- 1 tbsp wholegrain mustard
- 1 bunch rocket, ends trimmed, coarsely torn
- 1/4 treviso lettuce, leaves separated, coarsely torn
- 1 fennel bulb, trimmed, quartered, thinly sliced
- 2 tbsp fresh lemon juice
- 1 Red Delicious apple, quartered, cored, thinly sliced
Instructions
- Whisk the oil, vinegar and mustard in a small bowl. Taste and season with salt and pepper.
- Place the rocket, treviso and fennel in a large bowl.
- Combine the lemon juice and apple in a bowl. Add to the rocket mixture. Drizzle over the dressing and toss to combine.
