To make this dish at home by prescription from the author Gomer would need: 2 pink grapefruit, 1 bunch watercress, sprigs picked, washed, dried, 1 large ripe avocado, halved, stone removed, peeled, thinly sliced, 1 1/2 tbsp olive oil, 1 tbsp fresh grapefruit juice , 1/2 tsp Dijon mustard, Salt & freshly ground black pepper, Pinch of caster sugar .

Ingredients:

  • 2 pink grapefruit 
  • 1 bunch watercress, sprigs picked, washed, dried 
  • 1 large ripe avocado, halved, stone removed, peeled, thinly sliced 
  • 1 1/2 tbsp olive oil 
  • 1 tbsp fresh grapefruit juice 
  • 1/2 tsp Dijon mustard 
  • Salt & freshly ground black pepper 
  • Pinch of caster sugar 

Instructions

  1. Use a small sharp knife to remove the skin and white pith from the grapefruit. Cut into segments. Place in a large glass or ceramic bowl.
  2. Add the watercress and avocado to the grapefruit and gently toss to combine.
  3. Whisk together the oil, grapefruit juice and mustard in a small glass bowl until combined. Taste and season with salt, pepper and sugar. Drizzle salad with dressing and gently toss to combine. Serve immediately.
