Watercress and grapefruit salad

To make this dish at home by prescription from the author Gomer would need: 2 pink grapefruit, 1 bunch watercress, sprigs picked, washed, dried, 1 large ripe avocado, halved, stone removed, peeled, thinly sliced, 1 1/2 tbsp olive oil, 1 tbsp fresh grapefruit juice , 1/2 tsp Dijon mustard, Salt & freshly ground black pepper, Pinch of caster sugar .
Ingredients:
- 2 pink grapefruit
- 1 bunch watercress, sprigs picked, washed, dried
- 1 large ripe avocado, halved, stone removed, peeled, thinly sliced
- 1 1/2 tbsp olive oil
- 1 tbsp fresh grapefruit juice
- 1/2 tsp Dijon mustard
- Salt & freshly ground black pepper
- Pinch of caster sugar
Instructions
- Use a small sharp knife to remove the skin and white pith from the grapefruit. Cut into segments. Place in a large glass or ceramic bowl.
- Add the watercress and avocado to the grapefruit and gently toss to combine.
- Whisk together the oil, grapefruit juice and mustard in a small glass bowl until combined. Taste and season with salt, pepper and sugar. Drizzle salad with dressing and gently toss to combine. Serve immediately.
