Colourful, healthy vegetables are the backdrop to the herb-crusted roast beef and noodles in this Asian-inspired salad.

To make this dish at home by prescription from the author Gomer would need: 90g Hakubaku organic dried soba noodles, 1 large carrot, peeled, cut into matchsticks, 1/2 bunch broccolini, cut into 5cm lengths, 60g baby corn, thinly sliced diagonally, 50g baby Asian salad leaves , 150g Herb-crusted roast beef, thinly sliced, 1/2 cup fresh coriander leaves, 80ml Neil Perry Fresh Soy & Chilli Dressing .

Ingredients:

  • 90g Hakubaku organic dried soba noodles 
  • 1 large carrot, peeled, cut into matchsticks 
  • 1/2 bunch broccolini, cut into 5cm lengths 
  • 60g baby corn, thinly sliced diagonally 
  • 50g baby Asian salad leaves 
  • 150g Herb-crusted roast beef, thinly sliced 
  • 1/2 cup fresh coriander leaves 
  • 80ml Neil Perry Fresh Soy & Chilli Dressing 

Instructions

  1. Cook the noodles in a saucepan of boiling water for 2 minutes. Add the carrot, broccolini and corn and cook for 2 minutes or until tender. Drain and transfer to a serving bowl. Add the salad leaves, beef, coriander and dressing. Toss to combine and serve.
