To make this dish at home by prescription from the author Gomer would need: 4 slices prosciutto, rind removed, 1 egg, 1 garlic clove, 40ml lemon juice, 1 tsp Dijon mustard , 50g Parmigiano Reggiano*, 150ml olive oil, 2 baby cos lettuces, leaves torn .

Ingredients:

  • 4 slices prosciutto, rind removed 
  • 1 egg 
  • 1 garlic clove 
  • 40ml lemon juice 
  • 1 tsp Dijon mustard 
  • 50g Parmigiano Reggiano* 
  • 150ml olive oil 
  • 2 baby cos lettuces, leaves torn 

Instructions

  1. Preheat the oven to 190°C.
  2. Place the prosciutto on a tray lined with baking paper and bake for 8-10 minutes or until golden and crisp. Remove and allow to cool, then break into shards.
  3. Process the egg, garlic, lemon juice, mustard and half the Parmigiano in a food processor. Slowly add olive oil while processing until you have a rich emulsion.
  4. Toss the salad leaves with dressing and place in a serving bowl. Top with prosciutto. Grate remaining parmesan and sprinkle over top.
