To make this dish at home by prescription from the author Gomer would need: 4 slices prosciutto, rind removed, 1 egg, 1 garlic clove, 40ml lemon juice, 1 tsp Dijon mustard , 50g Parmigiano Reggiano*, 150ml olive oil, 2 baby cos lettuces, leaves torn .
Ingredients:
- 4 slices prosciutto, rind removed
- 1 egg
- 1 garlic clove
- 40ml lemon juice
- 1 tsp Dijon mustard
- 50g Parmigiano Reggiano*
- 150ml olive oil
- 2 baby cos lettuces, leaves torn
Instructions
- Preheat the oven to 190°C.
- Place the prosciutto on a tray lined with baking paper and bake for 8-10 minutes or until golden and crisp. Remove and allow to cool, then break into shards.
- Process the egg, garlic, lemon juice, mustard and half the Parmigiano in a food processor. Slowly add olive oil while processing until you have a rich emulsion.
- Toss the salad leaves with dressing and place in a serving bowl. Top with prosciutto. Grate remaining parmesan and sprinkle over top.
