Watermelon and whipped fetta salad

Watermelon adds a sweet touch to this summery salad.

To make this dish at home by prescription from the author Gomer would need: 1/4 small seedless watermelon, 2 tbsp lemon juice, 60g baby rocket, 1 bunch radishes, trimmed, thinly sliced, 1/2 cup firmly packed fresh mint leaves , 1/2 cup firmly packed fresh coriander leaves, torn, ¼ cup pepitas, toasted, 320g tub marinated fetta , 1/4 cup lemon juice.
Ingredients:
- 1/4 small seedless watermelon
- 2 tbsp lemon juice
- 60g baby rocket
- 1 bunch radishes, trimmed, thinly sliced
- 1/2 cup firmly packed fresh mint leaves
- 1/2 cup firmly packed fresh coriander leaves, torn
- ¼ cup pepitas, toasted
- 320g tub marinated fetta
- 1/4 cup lemon juice
Instructions
- To make whipped fetta, drain fetta, reserving marinating oil. Place fetta and lemon juice in a small food processor. Process until well combined. Gradually add 2 tablespoons reserved oil, processing until smooth and combined. Season with pepper.
- Remove and discard rind from watermelon. Cut into small wedges.
- Whisk lemon juice and ¼ cup remaining reserved oil together. Season with salt and pepper. Place rocket in a bowl. Drizzle with dressing. Toss to coat.
- Arrange watermelon, radish, rocket, mint, coriander and whipped fetta on a serving plate. Sprinkle with pepitas. Serve.
