- 4 young artichokes
- Juice of 3 lemons
- 2 baby fennel, thinly sliced, fronds reserved
- 150g button mushrooms, thinly sliced

Instructions
- Snap off outer leaves of artichokes until you reach the pale, inner leaves, then peel stems. Trim 2cm from tops then cut in half. Using a teaspoon, remove the hairy choke. Thinly slice artichoke, then immediately place in a bowl with lemon juice. Season with salt and pepper. Toss to combine, then stand for 30-60 minutes to marinate.
- Combine remaining ingredients except fennel fronds in a bowl. Add artichokes and lemon juice and gently toss to combine. Scatter with reserved fronds and serve immediately.
