Ingredients:

  • 4 young artichokes 
  • Juice of 3 lemons 
  • 2 baby fennel, thinly sliced, fronds reserved 
  • 150g button mushrooms, thinly sliced 
  • 80g aged manchego cheese or pecorino, shaved 
  • 1/3 cup extra virgin olive oil 

Instructions

  1. Snap off outer leaves of artichokes until you reach the pale, inner leaves, then peel stems. Trim 2cm from tops then cut in half. Using a teaspoon, remove the hairy choke. Thinly slice artichoke, then immediately place in a bowl with lemon juice. Season with salt and pepper. Toss to combine, then stand for 30-60 minutes to marinate.
  2. Combine remaining ingredients except fennel fronds in a bowl. Add artichokes and lemon juice and gently toss to combine. Scatter with reserved fronds and serve immediately.
