To make this dish at home by prescription from the author Gomer would need: 1/2 cup white long-grain rice, 2 tbsp extra-virgin olive oil, 1 tbsp white wine vinegar, 1 baby cos lettuce, 1 large pink lady apple, quartered, cored, roughly chopped , 1 celery stalk, trimmed, halved, 1/4 cup sultanas .

Ingredients:

  • 1/2 cup white long-grain rice 
  • 2 tbsp extra-virgin olive oil 
  • 1 tbsp white wine vinegar 
  • 1 baby cos lettuce 
  • 1 large pink lady apple, quartered, cored, roughly chopped 
  • 1 celery stalk, trimmed, halved 
  • 1/4 cup sultanas 

Instructions

  1. Cook rice in a saucepan of boiling water following packet directions until tender. Drain. Place on a tray. Cool.
  2. Place oil and vinegar in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
  3. Remove outer leaves and core from lettuce. Separate leaves. Wash. Pat dry with a tea towel. Roughly chop. Place lettuce, apple, celery and sultanas in a bowl. Add dressing. Toss to combine. Serve.
