To make this dish at home by prescription from the author Gomer would need: 340g jar marinated artichoke hearts, 100g snow peas, trimmed, thinly sliced, 1/2 x 220g tub baby bocconcini, drained, halved, 80g mixed salad leaves, 1/2 small red onion, thinly sliced , 3/4 cup roasted red capsicum strips, 1 tbsp chopped fresh oregano leaves .

Ingredients:

  • 340g jar marinated artichoke hearts 
  • 100g snow peas, trimmed, thinly sliced 
  • 1/2 x 220g tub baby bocconcini, drained, halved 
  • 80g mixed salad leaves 
  • 1/2 small red onion, thinly sliced 
  • 3/4 cup roasted red capsicum strips 
  • 1 tbsp chopped fresh oregano leaves 

Instructions

  1. Drain artichoke hearts, reserving 1/4 cup marinade. Cut artichoke hearts into quarters.
  2. Place snow peas, bocconcini, salad leaves, onion, capsicum, oregano and artichoke pieces in a bowl. Drizzle with reserved marinade. Toss gently to combine. Serve.
