To make this dish at home by prescription from the author Gomer would need: 1 large head broccoli, cut into florets, 1 red delicious apple, cored, cut into thin matchsticks, 2 stalks celery, trimmed, thinly sliced, 1/2 cup walnuts, toasted, roughly chopped, 50g baby spinach leaves , 1 tbsp chopped fresh chives, 1/4 cup whole egg mayonnaise, 2 tbsp lemon juice .

Ingredients:

  • 1 large head broccoli, cut into florets 
  • 1 red delicious apple, cored, cut into thin matchsticks 
  • 2 stalks celery, trimmed, thinly sliced 
  • 1/2 cup walnuts, toasted, roughly chopped 
  • 50g baby spinach leaves 
  • 1 tbsp chopped fresh chives 
  • 1/4 cup whole egg mayonnaise 
  • 2 tbsp lemon juice 

Instructions

  1. Cook broccoli in a saucepan of boiling water for 3 minutes or until bright green and just tender. Rinse under cold water. Drain well. Set aside to cool.
  2. Place apple, celery, walnuts, spinach, chives and broccoli in a large bowl. Combine mayonnaise and lemon juice in a small jug. Season with salt and pepper.
  3. Drizzle mayonnaise mixture over salad. Toss gently to combine. Serve.
